White Chocolate Hummus & Anchovy Toast

Serves 4

Hummus ingredients
1 tin of chickpeas in water
50g white chocolate
1 garlic clove
1tsp ground black pepper
1 tsp sea salt
50ml vegetable oil
½ lemon juice

Anchovy butter ingredients
100g unsalted butter
6 anchovy fillets
20ml vegetable oil
Bread – cook’s preference

Hummus method
Blend white chocolate, oil, garlic, lemon juice, salt and pepper into paste. Add chickpeas and pulse leaving some texture to the mix.

Butter method
Blend softened butter, anchovy fillets and oil until a smooth paste is achieved.

To serve, toast the bread and spread with anchovy butter and place a scoop of hummus on the side.
